This month, S.Pellegrino presents another of their Fine Dining Lovers Guest Chef Series events. On March 22nd and 23rd, Chef Ray Adriansyah—from Locavore, in Ubud (Bali)—will be delighting diners with an evening of fine dining and wine pairing at VIU, in the St Regis Bangkok hotel. Locavore recently came in 22nd on the list of Asia’s 50 Best Restaurants 2017 (left).
Featuring contemporary European cooking combined with hyper-local Indonesian ingredients, Locavore takes its name from the eco-conscious food movement of “locavorism”. The award-winning restaurant is helmed by Ray and his business partner Eelke Plasmeijer (both classically trained chefs) together with their passionate, dedicated kitchen team. Chef Ray was born in Jakarta and grew up with a deep interest in traditional and international cuisines, while Chef Eelke, a native of Holland, has been working in the restaurant business since he was 14. The two met in 2008 and have been working together ever since.
On these two special evenings Chef Ray will present contemporary European fare matched with local, Indonesian-sourced, seasonal ingredients. Among the classic signature dishes will be wild crayfish with petis butter, black beurre blanc, fermented garlic, lokio, and picked wild shallots. Meanwhile, wines from various renowned wine growing regions—including Spain, Germany, France and Italy—have been selected especially to complement each course, along with S.Pellegrino sparkling natural mineral water and Acqua Panna still natural mineral waters.
