“Locale” in Italian means existing or belonging to a specified area and in English means a place where something happens or is set, or that has particular events associated with it.
Local vol.1 is the new concept and first edition of About Eatery’s educative tasting menu series. Apart from celebrating the diverse, quality, and locally-grown ingredients all over Thailand, the goal is also to give background stories of the producers and specific locations.
Each of the six courses (B999++ food only; 1,999++ food & pairing) created and cooked by Chef Gabriele Tozza Luna stars a main ingredient sourced from a local farm and other elements weaved around it.
For a cold and refreshing yet creamy starter, “Zucchini” comprises of marinated zucchini, ricotta cheese and roasted almond. The zucchini comes from Uraiwan Organic Farm in the hills of Chiang Mai where seasonal certified organic fruits, vegetables, herbs and seeds are grown.
Up next, the smoky “Kale” course contains chickpea light hummus base, fresh crispy oyster and sautéed kale. Surprisingly, the kale comes from an urban farm, I-Farm in Bang Chak area of Bangkok run by Khun Biggie where kale, basil and peppermint are grown.
“Goat’s Cheese” course features of Chef’s grandmother’s recipe of homemade Foglie di Ulivo pasta which is rare to find at Italian restaurants in Bangkok. Accompanied by goat cheese, porcini and truffle foam, the dish is rich in texture and aroma. Vivin, Chaing Mai is one of the finest purveyors of gourmet French and Thai food products, especially cheese. Its goat cheese is handmade in collaboration with a local French artisan using 100% raw lait cru.
The main course, “Pork Cheek”, is served with green apple, purple mash and beer jus. The pork cheek comes from Sloane’s in Ratchaburi, an artisanal producer of quality meat products, and originally from free-range pigs in small, high-welfare farms across the country.
Pre-dessert course: Organic Phulae “Pineapple” sorbet with meringue crusts cleanses the palate before the “Chocolate” dessert. It makes use of Shabar 70% chocolate 4-ways from Suriya Cacao Farm in Chanthaburi that has been growing and exporting for almost a decade and meanwhile supporting other local cacao farmers.
All in all, this tasting menu does not only introduce some hidden Thai gems to diners but also About Eatery’s specialty, natural and orange wine to complete the experience.
