From December 7th to 10th 2017, Michelin-starred chef Alfonso Caputo from Taverna del Capitano will be taking diners on a 6-course culinary journey through authentic Southern Italian flavours at Dhala restaurant, Shangri-La hotel, Chiang Mai.
Although he graduated in Accountancy, Alfonso Caputo followed in his chef-mother’s footsteps and began working in the kitchen in 1989 in the birthplace of fine Italian dining run by Gualtiero Marchesi. Later, he went on to travel the world over, learning the deepest secrets of the trade and the different international culinary traditions.
In 1996, at the age of 26, Alfonso’s efforts were rewarded with the award of the first Michelin Star at Taverna del Capitano in Marina del Cantone, Italy, and a second star ten years later in 2006.
His cuisine, genuine yet at the same time refined, will lead you on a journey into the heart of taste, through space and time, and through the deep history of these places.
Highlights include: tuna carpaccio with Swiss chard and homemade ricotta flavoured with Sorrento lemon; crispy Sicilian red prawn served with potato spaghetti, bell pepper, and bonito bottarga sauce; and seaweed scented Gragnano’s pasta with calamari soup. The 6-course dinner will be paired with selected wines from Mastroberardino winery and is priced at B2,980++ per person.
