On Friday, March 31st, Chef Drew Nocente from Singapore’s Salted & Hung restaurant will join Chef Dallas Cuddy at Freebird Bangkok (28, Sukhumvit Soi 47) for a special 8-course ‘Contemporary Australian’ dinner. The emphasis of this unique occasion—part of the Fine Dining Lovers Guest Chef series— is to highlight the richness and diversity of this culinary style, and to introduce Bangkok gourmands to the talents of Chef Drew, who has a passion for traditional curing methods (as evidenced by the name of his restaurant, Salted & Hung, which was opened only last year, and is the first venture by this Italian-Australian chef).
The 8-course meal will feature dishes including crab with seaweed, quail with spiced sausage, Wagyu flank, and pineapple with coconut and rum. The menu will be paired with S. Pellegrino and Acqua Panna fine dining mineral waters, as well as select wines from Australia, New Zealand, and Austria.
