After four months of renovation last year, Charoen Krung’s stalwart 80/20 has already made the long-awaited return since December 2018. The new 80/20 sees husband-and-wife team of chef-patron ‘Joe’ Napol Jantraget and pastry chef Saki Hoshino offering their personal reinterpretation of Thai cuisine through 9-course tasting menu by thoughtfully fusing both traditional and modern cooking methods into their creations. The duo also fully incorporates 100% local, sustainable produce with an aim to bring out the unique taste of each ingredient in a way that one may not expect of.
Last year, while 80/20 was in hiatus, Chef Joe and Saki kept themselves busy by travelling (and cooking) around Asia. In Taiwan at “ICSA 2018”, one of Asia’s biggest culinary events, they were able to form a great friendship through their passion in cooking and mutual interest in using local ingredients with Chef Jimmy Lim of JL Studio and Chef Ryohei Hieda of Shoun Ryugin. It’s no surprise then why the two chefs do not hesitate to accept our invitation for “Friends of 80/20” series this July & August and showcase their cuisines for the first time in Bangkok.
Presented by Sanpellegrino and Acqua Panna, the second Friends of 80/20 series in partnership with Fine Dining Lovers invites Chef Jimmy Lim from JL Studio, Taiwan and Chef Ryohei Hieda from Shoun RyuGin for a collaboration this July.
JL Studio is the first restaurant to be serving Modern Singaporean cuisine overseas. Inspired by childhood memories, Chef Jimmy has honed his culinary skills at some of the top restaurants in Copenhagen and New York, etc. His dishes is a combination of French techniques and Singaporean roots and Taiwanese ingredients which earned him accolades since the restaurant opened in 2017 including Miele One To Watch for Asia’s 50 Best Restaurant 2019.
Together with Chef Joe Napol Jantraget and pastry Chef Saki Hoshino, Chef Jimmy is challenged to adapt his cooking to local Thai produce only for two nights, Tuesday 23 – Wednesday 24 July 2019, 10 courses for B3,900++ per person.
The third series invites Chef Ryohei Hieda from two Michelin-star restaurant Shoun RyuGin, Taiwan. Chef Ryohei is known as one of the leading chefs in Asia. He has gained extensive experiences in Japan and the United States from joining three Michelin-star restaurants.
Since 2014, his restaurant is considered the pioneer in local-sourced movement with outstanding ingredients usage. It is the sister restaurant of the legendary three Michelin-star restaurant RyuGin Tokyo. The Taiwan outpost has also gained two Michelin stars from Michelin Guide Taipei 2018 and 2019; ranked no.31 on Asia’s 50 Best Restaurants 2019; and no.1 on Taiwan on La Lista 2019.
For two nights only as well, Chef Ryohei will be collaborating with the two chefs of 80/20 Bangkok to showcase the best of both culinary styles, uniting Japanese, Thai, and Taiwan flavours by using local ingredients – 10 courses for B4,900++ per person on Thursday 22- Friday 23 August 2019.
