Trattoria Modern Cuisine at Courage, Tokyo
Michelin Chefs take on traditional home cooking in an easygoing setting. Trattoria refers to an Italian eating establishment serving simply delicious food. It can be classified in between a full-service ristorante which is more formal and a wine bar osteria which is more casual; and differed from an enoteca that is originally just for drinking wine. Trattoria project invites Michelin Chefs, who rather have a fine dining background and experiences, to cook Modern Casual cuisine in a less austere environment that will bring out the best in each chef’s talent, culinary style, and nostalgia while also challenging them to adapt from their usual menus and perfect some of the most simple dishes never before tasted elsewhere.
The secret table is for and by those who also love big and long table: Vol.1 in Tokyo with Federico Sisti (Milan) and Takeshi Oi (Tokyo).
