The Sommelier and General Manager of the 3-Michelin-starred restaurant, 8 1/2 Otto E Mezzo Bombana (Hong Kong) together with the Executive Chef Sandro Aguilera from UNO MAS, Centara Grand at CentralWorld are presenting members of the media with the perfect pairing experience between food and wine.
The six-course meal kicked off with oyster – dried octopus and potato foam then followed Palamós Squid with cauliflower and artichoke.
Next up was the Bonito Belly – native black garlic with Mediterranean herbs and concentrated juice; Tradition Ocean and Land – Iberico Presa pork with Denia red prawn and consommé infused ham and then the 120-hour roasted Wagyu beef with endive and crispy pulled beef.
Each dish was paired with Italian wines carefully selected by the guest Sommelier Marino Braccu himself, usually with a focus on regional varietals and smaller brands. Marino works to promote small wineries and indigenous grapes that are deemed good in quality. According to him, many wine drinkers and the market in general would like some special recommendations other than the more known.
Afterwards, guests and members of the media enjoyed an insightful Master Class session from the guest Sommelier Marino Braccu who led the journey through 20 iconic regions in Italy. He set a degustation with 16 wines representing all the Italian regions, including North, South, and Centre.
