Park Jinyong from Zero Complex in Korea was selected as the regional winner for Northeast Asia semifinals for S.Pellegrino Young Chef 2015.
After a full day of exciting cook-off, Park Jinyong from South Korea emerged with the top score presenting his winning dish “Samgyetang” to the judges, explaining that Samgyetang is a traditional Korean chicken soup and he had reinterpreted by applying Western cooking techniques to twist it into an entree course.
Known for his creative flair and three Michelin-starred Wan Chai restaurant Bo Innovation, Chef Alvin Leung was very impressed with Park’s dish and commented, “The dish has all the elements, both technique, uniqueness and genius. Park presented a dish of his very own, with good complexity and good contrast. Ingredients are well executed, near flawless, and the overall message was clear.”
