ONE CHEF, ONE RECIPE: Chef Golf’s Chicken Adobo

The food photographer-turned-MasterChef all-star, Chef Golf Sanya Thadathanawong, showcases his award-winning Filipino favourite Chicken Adobo.

Sanya Thadathanawong, better known as “Chef Golf,” is a former food photographer who loves to travel and experience the world’s many different cultures. Following his strong passion for food, he participated in 2015 in “The Amazing Food Challenge Season 2: Fun in the Philippines,” a hit reality show on the Asian Food Channel (AFN). He was the only Thai among 10 other competitors from across Asia. His food journey continued when he later joined Master Chef Thailand Season 2 and Master Chef All-Star Thailand.

Chef Golf Sanya Thadathanawong

Today, Chef Golf will walk us through the flavours of victory with his renowned Chicken Adobo, a Filipino specialty that he prepared to win the final round of the MasterChef competition.

Chicken Adobo

Ingredients:

  • Chicken thigh                     500 g
  • Minced garlic                      1  Tbsp
  • Ground black pepper        2  Tsp
  • Dried chilli                           5
  • Bay leaves                           2
  • Light soy sauce                  2  Tbsp
  • Dark soy sauce                   1  Tsp
  • Vinegar                                2  Tbsp
  • Palm sugar                          1  Tsp
  • Water                                  1 litre 
  • A pinch of salt
  • Vegetable oil

Instructions:

-Marinate the chicken thighs with minced garlic, ground black pepper, and salt for 40 minutes.

-Fry the chicken just so the outside flesh is firm and the skin is crisp.

-Add the fried chicken into the pot; add water, dried chilli and bay leaves.

-Bring it to a boil on high heat.

-Season with light soy sauce, vinegar, palm sugar, and dark soy sauce.

-Turn the heat down and simmer for 45 minutes.

-Serve with jasmine rice, cucumbers, and carrots on the side.
