ONE CHEF ONE RECIPE: Chef Garima of Gaa — “Tea Leaf Salad”

Chef Garima Arora cracks open her grandmother’s recipe book for a favourite Burmese-inspired dish, Lahpet Thoke.

While we’re all stuck at home waiting for our vaccines, why not use the opportunity to learn new cooking skills from one of the best out there: Chef Garima Arora, the first Indian female to earn a Michelin star. Whenever people talk about Indian food, I’m often confused by all the different spices and ingredients. Thankfully, Chef Garima is introducing a simple Indian dish that we all can easily make at home.

Chef Garima is the founder of “Gaa,” the modern Indian eatery on Sukhumvit Soi 53. Her restaurant offers a perfect cross between traditional Indian cooking techniques and locally sourced Thai ingredients. Gaa ranked No. 46 on Asia 50’s Best Restaurants in 2021.

Here she guides us through a home-made version of Lahpet Thoke, a Burmese-inspired tea leaf salad. This 11-ingredient recipe was passed down from my grandmother, who used to live in Assam. It is her interpretation of the dish,” Chef Garima says.

Lahpet Thoke, a Burmese-inspired tea leaf salad


1 Tbsp. minced ginger

5 Tbsp. ghee, melted

Red chilli powder, to taste

1/2 cup chickpeas

1/2 cup besan/roasted chickpea flour

Salt, to taste

Lime, to taste


Grated raw papaya (10 Tbsp. per person)

Rice (1 Tbsp. per person)

1/2 cup boiled potato


  1. Mix rice (1 Tbsp. per person)
  2. Add grated raw papaya (10 Tbsp. per person)
  3. Mix together with potatoes and chickpeas
  4. Season and toss the mixture with besan, salt, red chilli, ginger, lime juice and ghee
  5. Garnish with mint before serving
    6. Enjoy!
