Former Robuchon’s kitchen team on a new ‘stage’ in Ekamai
A quaint neighbourhood of Ekamai Complex in Sukhumvit Soi 63 is now home to the new restaurant serving notable French and global-inspired cuisine.
Stage (pronounced ‘Sa-Targe,’ short for ‘stagiaire’, meaning ‘apprentice’ in French) is a unique restaurant offering French and global-inspired cuisine in a casual dining atmosphere. Sporting a midnight blue hue, the interior decor is designed by the Paradigm Shift team (Crimson Room, Canvas). Delicate flower and architectural sketches hung high on one side while soft cream banquette seats hugged the walls. A majestic wooden chef’s table takes centre stage in front of the glass-panelled kitchen.
The kitchen team, led by chef Jay Sangsingkaew, after regrouping the former colleagues from L’Atelier de Joel Robuchon is adamant about putting their signatures on the menu.
Stage presents three options of tasting menus: four-course (B1,900), six-course (B2,900) and the ‘Stage Experience,’ an eight-course tasting menu (B3,900) with accompanying wine pairing to choose from (B900, B1,400 and B1,900).
The menus, today, feature elaborate signatures such as Furano Wagyu Hokkaido A5 served with pickled Girolles; Truffle Hot Dog, pork sausage hot dog with Stage’s (not ordinary) ketchup; Red Mullet with young Bamboo and the nostalgic classic like Baba au Rhum for dessert. Guests can also pick their sweet treats from the Dessert Trolly if they so choose.
The restaurant manager and sommelier, Louis Pronritt, formerly the sommelier at L’Atelier de Joel Robuchon and head wine sommelier at Bangkok Marriot Marquis Queen’s Park, has curated a fantastic list of natural and biodynamic wines including Cremant de Jura, a refreshing brut from France; Trebbiano from Veneto, Italy; and Blaufrankisch, an organic red from Austria.
*The tasting menus are updated every two months according to the seasonal ingredients.
