Federico Balzarini, the new bar manager at Vesper, one of Asia’s 50 Best Bars, showcases his distinctive recipe for a Ruby Collins. 

Federico Balzarini, the new bar manager at Vesper, was born and raised in Salo in northern Italy, where he fell in love with his work in a local bar. He left home in 2016 to pursue his dreams in London, eventually joining the legendary American Bar at The Savoy, which was named the No. 1 bar in the world in 2017 by World’s 50 Best Bars.

Balzarini’s journey provided him with creative inspiration and a heightened appreciation for the service mindset. He is making debut in Asia at Vesper, which has been named one of Asia’s 50 Best Bars from 2016-2021.

Today he will showcase his delicious Ruby Collins, a special drink inspired by his love for Oloroso sherry.

Ruby Collins 

Ingredients:

1. 45ml dark rum

2. 20ml Oloroso sherry

3. 15ml sugar

4. 45ml roselle tea

5. Topped with tonic water

Instructions:

Stir all the ingredients together and pour into a glass. (No need to shake)
